Nothing Can Beet YOU!

Happy Friday!
Around me, the farmer's markets are full to bursting with all sorts of  wonderful things that have sprung from the earth.  In fact, every day, except Mondays there is a local farmers market!

One of my favorite things growing up was my grandma's pickled beets!  They were a staple at every holiday dinner and many of the every day dinners, too.  Recently, I have discovered that I like them roasted with olive oil and rosemary.

This week at A Day for Daisies we are celebrating the yummies that are growing all  around and I have the privilege of using the fancy beets:
